Tuna Salad

A healthy tuna salad that actually tastes good. It is full, fluffy, and flavorful. Meal prep for the week and store for up to 5 days.

Ingredients

  • 4 6-ounce cans of tuna packed in water
  • 2 small dill pickles, diced
  • 1 large celery rib, diced
  • 1/4 cup red onion, minced
  • 1 garlic clove, grated
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • ground black pepper (to taste)
  • 3/4 cup plain Greek yogurt
  • several romaine hearts 

Instructions

  1. Drain cans of tuna well.
  2. Scoop tuna into a mixing bowl, and fluff with a fork.
  3. Add diced pickles, celery, red onion, garlic, lemon juice, salt, pepper, and Greek yogurt to the mixing bowl.
  4. Sirt well and refrigerate.
  5. Serve over romaine lettuce leaves.
