Spicy Seared Scallops

Ingredients

  • Cooking spray
  • 1.5 pounds dry sea scallops
  • 1/2 teaspoon salt, divided
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup thinly sliced red onion
  • 2 red Fresno chiles, seeded and thinly sliced
  • 4 garlic cloves, thinly sliced
  • 1 pound baby spinach
  • 8 lemon wedges

Instructions

  1. Heat a large cast-iron skillet over high heat.
  2. Coat skillet with cooking spray and sprinkle scallops with 1/4 teaspoon salt and pepper.
  3. Add scallops to skillet and cook for 2 minutes, turn and cook for another minute.
  4. Remove scallops from skillet and keep warm.
  5. Reduce heat to medium-high.
  6. Add 1 tablespoon olive oil to the skillet.
  7. Add remaining 1/4 teaspoon salt, onion, and chiles. Cook for 2 minutes.
  8. Add in the garlic and cook for another 2 minutes.
  9. Add the spinach in small batches, stirring to wilt before adding more. 
  10. Plate scallops with spinach mixture and lemon wedges.
