Spicy Seared Scallops

Ingredients
- Cooking spray
- 1.5 pounds dry sea scallops
- 1/2 teaspoon salt, divided
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 cup thinly sliced red onion
- 2 red Fresno chiles, seeded and thinly sliced
- 4 garlic cloves, thinly sliced
- 1 pound baby spinach
- 8 lemon wedges
Instructions
- Heat a large cast-iron skillet over high heat.
- Coat skillet with cooking spray and sprinkle scallops with 1/4 teaspoon salt and pepper.
- Add scallops to skillet and cook for 2 minutes, turn and cook for another minute.
- Remove scallops from skillet and keep warm.
- Reduce heat to medium-high.
- Add 1 tablespoon olive oil to the skillet.
- Add remaining 1/4 teaspoon salt, onion, and chiles. Cook for 2 minutes.
- Add in the garlic and cook for another 2 minutes.
- Add the spinach in small batches, stirring to wilt before adding more.
- Plate scallops with spinach mixture and lemon wedges.
