
Egg Spinach Scramble
This healthy egg scramble is ready in just minutes and is a great way to get in your protein for the day. Serving size is for one person.
Ingredients
- 1 egg
- 1/4 cup egg whites
- 1 cup spinach
- Pico de gallo
Instructions
- Cook spinach in frying pan (add a little water if needed) over medium heat for 2 to 3 minutes.
- Add egg and egg whites to the pan with spinach and scramble together.
- Cook eggs fully. Plate and top with pico de gallo.
