Egg Spinach Scramble

This healthy egg scramble is ready in just minutes and is a great way to get in your protein for the day. Serving size is for one person. 

Ingredients

  • 1 egg
  • 1/4 cup egg whites
  • 1 cup spinach
  • Pico de gallo

Instructions

  1. Cook spinach in frying pan (add a little water if needed) over medium heat for 2 to 3 minutes.
  2. Add egg and egg whites to the pan with spinach and scramble together.
  3. Cook eggs fully. Plate and top with pico de gallo.
